    I noticed that your recipes generally do not include starches such as potatoes, sweet potatoes or yams. The Specific Carbohydrate Diet developed by Elaine Gotchall also eliminates these types of starches due to the manner in which they are digested.

    Are you eliminating them for digestive reasons or do you just prefer winter squash to potatoes in recipes ?

    I have been eating gluten-free since 1993 and I noticed that I do much better eating nut flours and no grains at all. I am just curious if you found the same to be true for you and decided to focus on nut flours.

    A. I really think that it is up to each individual to figure out what works for them. I went through several elimination diets to come to the food plan that I now follow. I know my digestive process and energy level are much better without grains, however, I do feed gluten free grains to my boys; so it's a case by case type of thing.

    Another reason might be that the foods you mention are high glycemic, specifically most "white foods"... sugar, rice, flour, bread, pasta, etc.
    Excellent website for determining GI-GL (glycemic index-glycemic load) of all foods.
