INGREDIENTS YOU'LL NEED
2 servings Star Anise Foods’ Brown Rice Noodles
½ cup thinly sliced Cucumber
½ cup thinly sliced Red Bell Pepper
¼ cup Cilantro (optional)
½ Lime
1 tsp Olive Oil or Sesame Oil
COOKING INSTRUCTIONS
Step 1: Bring water to boil. Cook Noodles for about 2 mins until tender. Drain and rinse thoroughly with cold water. Stir thoroughly with Sesame or Olive Oil.
Step 2: In a salad bowl add Noodles, Cucumber, Red Bell Pepper, Cilantro. Squeeze Lime all over. Mix. Salt & Pepper to taste.
Note: You can add ready to eat Tofu, cooked Chicken Breast Strips, Shrimps and other vegetables if desired.
