I love this dish because it’s great to start the day with a nice dose of green vegetables, and the boys adored how bright these eggs are.
Green Eggs are also amazing because they’re a fun food that doesn’t contain any dye, but they still have a bright green color!
Breakfast Ideas That Are Easy
My favorite way to dress up these green eggs is with gluten free bread and avocado.
I toast a piece of my Recipe for Bread with Almond Flour, then, by adding half a sliced avocado to the plate I balance my protein with blood sugar-stabilizing fat. This superfood combination will start your day off right.

To make this a recipe for green eggs and ham, simply dice up leftover ham and throw it into the green eggs while you’re scrambling them.

Green Eggs
Ingredients
- 4 large eggs
- 4 leaves large kale (30 g), do not remove stems
- 1 pinch celtic sea salt
- oil of your choice for frying pan
Instructions
- Place eggs, kale, and salt in vitamix
- Blend on high until smooth
- Heat oil in 8 inch frying pan over medium heat
- Pour egg mixture in pan
- Cook eggs to your preferred doneness
- Serve
As the boys grew older, we had Green Eggs several times a week.
And, I made them every St. Patrick’s day so that we could start our morning in the spirit with some good healthy green food!

If I wanted to do a South-Asian take on this with chard in place of kale, fresh ginger, turmeric, and cilantro all blended, what portions would you recommend? I was thinking about the following but not sure how it would taste
3 leaves chard
1 clove garlic
1/4 tsp Celtic sea salt
Pinch freshly ground black pepper
1/2 bunch cilantro
1/2″ turmeric, peeled
1″ ginger, peeled
1 tsp coconut oil
Place eggs, greens, herbs, spices, pepper, and salt in Vitamix. Blend on high until smooth, 15-20 seconds.
Heat oil in an 8-inch skillet over medium heat.
Pour the green egg mixture into the skillet
Cook eggs to preferred doneness

I made this today, worked fine with 3 smallish kale leaves and 2 eggs. I added one small chopped shallot or small type of red onion– this was fantastic. I scrambled them with a chicken sausage and if I wasnt dieting I am sure the additional Rye bread would of been a lovely complement. Such a simple way to get more greens in the diet, cant believe I have never thought of it. Thanks so much for sharing.
