Cashews are highly nutritious, they have more vitamin C than oranges and are higher in protein than walnuts.

Cashews can be an important staple for those following a raw diet or dairy-free diet as they are a wonderful substitute for dairy products. I use cashews in recipes including my Cashew Milk, vegan Hot Cocoa, and Vegan Vanilla Ice Cream.
