This recipe for healthy Mint Chip Truffles is based on one from the book Practical Paleo. Admittedly, I have not read the book cover to cover, I have merely perused. However, I liked what I saw and wanted to share my version of one of the recipes that caught my eye these Chocolate Mint Truffles. They’re full of luscious heart healthy coconut oil.
Here’s a couple of pointers for you so that making this Paleo snack is even easier! When you scoop the mixture into a muffin cup be sure to use a 1 tablespoon ice cream scoop which will come in very handy. If you want to make a solid truffle (that is flat and not domed on top) then don’t refrigerate the mixture, simply transfer the liquified concoction into the paper lined mini muffin cups and chill to harden.
