Practical Paleo: Mint Chip Truffles

  1. Combine coconut oil, coconut butter and macadamia nut butter in a vitamix
  2. Pulse in stevia, honey, mint and salt
  3. Transfer mixture to a small bowl
  4. Stir in chocolate
  5. Refrigerate bowl for 10-15 minutes
  6. Scoop mixture into paper lined mini muffin cups
  7. Refrigerate and serve chilled

Makes 6 truffles

When I scooped the mixture into the muffin cups I used a 1 tablespoon ice cream scoop which came in very handy. If you want to make a solid truffle (that is flat and not domed on top) then don’t refrigerate the mixture, simply transfer the liquified concoction into the paper lined mini muffin cups and chill to harden.
