Flourless Chocolate Cupcakes

Posted on May 14, 2010

Here’s a quick and easy dessert that will wow your guests whether they’re gluten free or “full of gluten”. This Flourless Chocolate Cupcake recipe is dark and rich –my husband absolutely loved it.

He is really benefiting from the Elana’s Pantry month of cupcakes, given that he is my primary taste tester. And thankfully he enjoyed this treat as much as, or even more than, the last (Banana Cream Pie Cupcakes) –though that’s not much of a surprise since he’s quite the ... read more →

Banana Cream Pie Cupcakes

I’m on a gluten free cupcake mission, as you can see from the photo above and my other recent posts for Jelly Donut Cupcakes and Coconut Key Lime Cupcakes.

The boys are thrilled when they get home from school and the house looks like its ready for a birthday party.  And I’m thrilled to see them with frosting all over their cute little faces.

Coconut Cupcakes with Key Lime Icing

Posted on May 7, 2010

Thanks everyone for your cupcake suggestions.  The idea for these gluten free Coconut Key Lime Cupcakes came from comments left by sas and laura in my Jelly Donut Cupcake post –the post that launched my own personal month of cupcakes.

These gluten free cupcakes were a real winner with my children.  Whenever I get out the icing bag, they go bonkers and yesterday was no different.  I had to hold them back when they arrived home from school, so that I ... read more →

Posted on May 4, 2010

In honor of Celiac Awareness Month, I have decided to make May my own personal cupcake month.  Today’s post is Jelly Donut (or Doughnut) Cupcakes, and I’m going to attempt to do a gluten free cupcake recipe every time I post in May –wish me luck!

These gluten free Jelly Donut Cupcakes are filled with yummy raspberry jam and oozing with fruity goodness.  My husband liked them so much that he took the entire batch to his office to (hopefully) share ... read more →

Riesling Biscuits

Posted on April 30, 2010

A while back, I posted a recipe for Cabernet Cookies, using Cabernet Grape Seed Flour from AprèsVin. I thought they turned out very well –not too sweet, full of antioxidants and rich, dark chocolate; basically, my family was hooked.

Recently, I was reviewing the comments for that post and saw this one that Jenné from sweetpotatosoul.blogspot.com left.  In it she mentioned making some cookies with grapeseed flour, so I hopped over to her blog and to take a peak. Jenne had ... read more →

Lemon Poppy Seed Bunny Cookies

Posted on April 2, 2010

The idea for these delicious gluten free Lemon Poppy Seed Bunny Cookies for Easter came from Gluten Free Foodie Heaven and her Lemon Poppy Seed Bunnies recipe.  Even though we don’t celebrate Easter, I thought they were very cute and springlike and had to make some of my own with the usual favorite ingredients that I keep on hand.

Chocolate Espresso Power Bars

Posted on March 23, 2010

Vegan Chocolate Espresso Power Bars made with pecans, dates and decaf espresso.

Who doesn’t enjoy a good power bar?  One that is easy to travel with and renders a healthy snack on the go?

These gluten free Espresso Power Bars have a delicious espresso-chocolate-vanilla-ish flavor that makes them equally satisfying as a snack or dessert.  I found mine were just a tad crumbly, you may need to add a dash of water to help yours hold together well.

Carrot Kugel

Posted on March 19, 2010

Carrot Kugel –who would have thought of that? Well, the fabulous Lisa Stafford, that’s who. Lisa recently posted her recipe for Carrot Souffle in the forums and here’s what she had to say about it:

“I made this dish Tuesday night and had some with our meat and salad. I warmed some up in the toaster oven for lunch on Wednesday. Before I put it away, I tried it cold. Oh my goodness! I like it cold much better. It reminds me of ... read more →

Peppermint Patties

Posted on March 12, 2010

These healthier and vegan Peppermint Patties only have four ingredients.

Ok, when the idea of Peppermint Patties first crossed my mind I was not enticed.  “Chocolate and mint?” I said, “That sounds like toothpaste, not food.”

Well, a few weeks later, the idea lingered, gnawingly and I decided I just had to make those Peppermint Patties.  So I did.  And they are good.  Even to someone who does not care for the idea of chocolate and mint.   Someone who is Jewish and ... read more →

Double Chocolate Orange Torte

Posted on March 9, 2010

This gluten free Double Chocolate Orange Torte will make a nice treat for Passover, which is rapidly approaching!  My family, however, needed no holiday or excuse to devour the entire cake on a Sunday afternoon.  This treat is easy to make and even easier to eat.  Go ahead, try some and see for yourself.

Mounds Candy Bars

Posted on February 23, 2010

These healthier mounds bars are a quick and easy homemade chocolate and coconut candy.

We will be making these yummy gluten free candy bars for Purim which is coming up this week.  Of course, we also plan on making Hamantaschen as well, which is one of the boys’ fave treats.

These mounds bars are easy to make and rich with dark chocolate and a coconut filling consisting of shredded coconut, coconut oil and agave.  My older son downed them and thought ... read more →

Cabernet Cookies

Posted on February 17, 2010

I’m still on my grape seed flour kick and made these yummy Cabernet Cookies the other day which were “all gone” quite quickly.  If you like the combination of red wine and chocolate, be sure to give these treats a try.

Grape seed flour is full of antioxidants, fiber and protein and adds a nice flavor and texture to baked goods.  I’m loving experimenting with it these days.  One more super food to add to the repertoire.

Chocolate Chip Cookies with Grapeseed Flour

Posted on February 12, 2010

These yummy little protein-a-licious cookies are the result of a complimentary sample of Chardonnay Grapeseed Flour that I received from Eric Leber of AprèsVin.  Grapeseed flour?  Yes, you heard it right, grapeseed flour.

While these treats look like they are double chocolate chip cookies, they actually are not.  It is high protein, antioxidant rich grapeseed flour that gives them their nice dark color.  And yes, grapeseed flour comes in different flavors.  This chardonnay grapeseed flour has a buttery taste and graham ... read more →

Magically Moist Cherry Apricot Cake

Posted on February 9, 2010

My husband loves this simple, moist gluten free Cherry Apricot Cake. I make sure to use organic dried fruit in this dessert since pesticides levels tend to be high in conventional cherries and apricots and more concentrated in dried fruits. I often purchase my organic dried fruit at the local health food store, Vitamin Cottage; for more “hard to find” ingredients such as organic dried cherries (sans added sugar) one of my favorite sources is an online company ... read more →

Pancakes Revisited

Posted on January 26, 2010

These gluten free, grain free and dairy free pancakes are a healthy breakfast treat.

The feedback pertaining to the Pancake and Flapjack recipes on my website has been interesting to watch.

Many people have loved and had great success with these recipes and many have had trouble with them as well.  Since these 2 recipes seemed to be more troublesome then most, I decided to re-work them in this post.

There are several factors to keep in mind:

Don’t cook the pancakes on ... read more →

Vanilla Almond Butter

Posted on January 22, 2010

The creation of this delicious, homemade vanilla almond butter is hardly my own.  One of my favorite readers, Courtney, over at benefityourlife.com, gave me several amazing presents during the holidays and one was a bottle of super tasty vanilla almond butter from the lovely Katie Kearney over at naturallynutty.com. Yum!

This is a great product, and when I finished Courtney’s gift and was too impatient to wait for my own order to arrive, I came up with the little treat below.  ... read more →

Lemon Lavender Cookies

Posted on January 12, 2010

I think I’m on a bit of a vegan kick these days.  First came the Marcona Almond Mayo sans eggs and now these vegan Lemon Lavender Cookies.

Don’t worry, even though this recipe sounds a tad weird, it’s subtle and I think, delicious.  It kinda reminds me of the recipe in my gluten free cookbook for Rosemary Hazelnut Cookies.

Marcona Almond Mayonnaise

Posted on January 8, 2010

This vegan mayonnaise has quickly become a family favorite.  I based the idea on a recipe I found in an old issue of Martha Stewart Living.  I happened upon an interesting recipe for a peanut salad dressing, made several adaptations until I ended up (somewhat accidentally) with this scrumptious gluten free, egg-free vegan mayo which is delicious on my Kaleslaw.

Vanilla Roasted Walnuts

Posted on December 24, 2009

I’m slightly addicted to these Vanilla Roasted Walnuts and so is my husband.  They have a hint of sweetness and a nice burst of vanilla goodness.  On top of that, Walnuts are a great source of Omega-3′s, have a high antioxidant count and are also beneficial for cardiovascular health.  So I’m on the walnut bandwagon.

Here’s the recipe for another gluten free, tasty, higher protein holiday snack with nuts.
