Orange Chocolate Coconut Clusters

Posted on October 3, 2008

New Year, new school.  Wow, this week has been busy.  The boys have settled miraculously into their new habitat and I can feel the relief flowing through my body.

My favorite comment this week was from Melissa, a reader who said, “It’s hard, but before you know it, they will adjust and be just fine. Kids are so resilient! It’s probably harder on mom. :-)”   Well, yes, Melissa, I couldn’t have said it better myself and the smiley face was much ... read more →

Almond Butter Blondies

Kelly over at Celiac Chicks does a fabulous job covering the latest in gluten-free news. On top of that, she is a lovely person. It has been great getting to know her through our email conversations these past few months.

I recently spent some time looking through the recipe section of Kelly’s site and was most intrigued by these delicious looking peanut butter bars. She traces the original recipe back to one from 2003 in Family Circle magazine. Of course, she ... read more →

Almond Milk

I guess that would make me a yippie.

Alas, I digress. Several years ago when I ... read more →

Chicken Salad with Almonds

Posted on August 29, 2007

Tonight’s project was a gluten free chicken salad with almonds.

Even though the days of August are long and hot, the month seems to speed by every year, and this year has been no different.

Today the boys started school and my older son had his first viola lesson. He locked the viola case to keep his little brother out. When we arrived at the lesson, he realized that he had forgotten the key, leaving it at home in its “secret ... read more →

Product Review: Blanched Almond Flour

Posted on February 20, 2007

NOTE: Please see my updated Almond Flour ingredient page.

Why almond flour? I am asked this question at least once a day. Almond flour is highly nutritious, easy to use and readily available. For those of us watching our glycemic index, almond flour is high in protein and low in sugars.

Unlike other alternatives to wheat flour, almond flour is moist and delicious. After having tested just about every gluten-free flour out there, I can save you a lot of time and ... read more →
