Posted under entrees on December 11, 2009

Kumquats are in season right now. What’s a kumquat you ask? Essentially it’s a citrus fruit that closely resembles an orange, though it is much smaller. If you want to know more about kumquats there is a great article over at the Cooking Light website.
Meanwhile, here’s a cozy holiday recipe for gluten free Kumquat Garlic

Vegetarian Pad Thai

Posted under entrees on June 24, 2009

This Pad Thai is one of my family’s favorite dishes.  Add a heap of grilled chicken or sea food and you have a delicious high protein meal.
I purchase my noodles at the Asian market in town and haven’t seen them online.  If you are looking for noodles, you’ll need to check out the Asian markets

These delicious cookies, chock full of coconut, walnuts and raisins are the product of our very recent visit to my parents.
Today the boys and I returned home to Colorado from visiting them in California. We went to have some family bonding time and distract them from a health issue one of them has been dealing

Nutty Bread

Posted under breads on May 4, 2009

This hearty, nutty gluten-free bread is delicious anytime of day.
Toast it for breakfast and serve with a side of scrambled eggs.  Works great along with a big salad at lunch.   Or, for a quick and easy dinner, it makes a great sandwich with organic turkey, avocado, romaine, tomatoes and dijon.
I think this bread would

Posted under breads on April 17, 2009

I’ve been a bit lazy in the kitchen this past week –we’ve had sandwich night twice already.  I slice and toast the gluten-free bread (pictured) and then put it out with organic turkey slices, romaine lettuce, sliced tomatoes, dijon mustard, grapeseed oil vegenaise and sliced cheese (dairy for the boys).  I serve the sandwich fixings

Double Chocolate Mocha Biscotti

Posted under desserts on April 14, 2009

These Double Chocolate Mocha Biscotti are vegan and gluten-free.  Because eggs are a main component of biscotti, I haven’t seen a lot, if any vegan recipes, for this type of cookie.  My favorite thing about these gluten-free biscotti, however, is how simple they are to make.  Just throw everything in the food processor and you’re

Chocolate Peanut Butter Tart

Posted under desserts on April 7, 2009

How low can you go?!  This gluten free chocolate peanut butter tart is sweetened with a delicious alternative sweetener that I have been enjoying of late –yacon syrup.
This lower glycemic sweetener is derived from the yacon plant which is often referred to as “apple of the earth.”  Yacon is high in fructooligosacharides (FOS), a form

Chocolate Covered Cherries for Valentine’s Day

Posted under desserts on February 6, 2009

Ok, I confess, it took a few batches to get this recipe “just right,” which for me means a couple of things.
First, I had to get these babies to to look decent, edible, desirable even.  Let’s just say my first attempts were rather inept.  I tried to make a rich and gooey sauce with cherries

Turkey Chili

Posted under entrees on December 1, 2008

Leftover turkey?  I opened the fridge this morning and noticed I still had a pile of cooked bird from Thanksgiving.  While I am more than happy to have a surplus of food during these times, I must admit, I was perplexed as to what to do with it.
Turkey chili of course.  Here’s a recipe that

Vanilla Plum Jam

Posted under condiments on September 16, 2008

As fall approaches, my attention is shifting to our fruit trees. A few years back we planted a peach and two apple trees along the perimeter of our packed yard; they are now bursting with fruit, as is our dwarf plum. While we eat the peaches and apples straight off the trees, each

Peach Crisp

Posted under desserts on September 9, 2008

The boys’ school is selling organic peaches.  I ordered two cases (about 40 lbs.) for my family; we will be getting our luscious Colorado fruit this Friday at 3 pm.
In the meantime, I am readying my peach recipes.  Of course, my all time favorite is peach crisp.  It is perfect for fall, which incidentally arrived

Coconut Cream Frosting

Posted under condiments on May 16, 2008

Frosting is one of my favorite foods; in fact, I consider it an actual food group. After all, what is a cupcake without frosting? It’s nothing!
Lately I have been stymied when it comes to the frosting creation process. Yes, I have my delicious vegan chocolate frosting recipe, however, I have been lacking

Alas, I digress, this post is about myfeasts.blogspot.com.

Elana’s Pantry in the Denver Post

Posted under desserts on January 25, 2008

This past fall, the food editor of the Denver Post wrote an article on “addictive” food blogs. Not only was I surprised to find my blog in it, I was dumbfounded that Elana’s Pantry was mentioned in the same piece as Heidi Swanson’s 101 Cookbooks.
Swanson is everyone’s favorite food blogger. Her recipes are revolutionary; she
