Celebrate fall with gluten free muffins made from freshly roasted pumpkin and coconut flour, along with a glass of almond milk.
If I had a grain free muffin of the month club November would be pumpkin spice muffins. September would be banana muffins and May would be blueberry muffins. Of course, I have no such club, however, I do love a good healthy muffin.

I discovered this hot cereal on Ricki Heller’s blog, Diet Dessert and Dogs, after she tweeted it a couple of days ago. I’ve had it for my gluten free breakfast every day since! When the boys were little we used to have green eggs for breakfast everyday. They grew out of that phase a while ago and now I think this Green Eggs recipe is perfect for St. Patrick’s day.

Did you know that I am obsessed with all things muesli? I have a recipe for muesli bread in my book, and I make just about everything else I can with muesli. While traditionally muesli has oats in it, I make mine grain free, as I follow as diet that is very close to Primal/Paleo.

It really is Joy the Baker’s fault. I have been baking scones every day since I read her post for Orange and Dark Chocolate Buttermilk Scones. I knew I would have to make my own gluten free version. Okey dokey, here comes a turkey day fave. I’ve had a lot of requests for a gluten free biscuit lately, especially in my forums. These biscuits are super easy to make and high protein fare to boot. So you just might want to add these to your Thanksgiving menu. Or your Christmas dinner menu. Or a brunch menu. As you can see, they’re quite versatile.

These gluten free, grain free and dairy free pancakes are a healthy breakfast treat.

I’ve been slightly obsessed with rosemary lately. I put it in everything and just can’t seem to get enough of this delicious herb. My latest rosemary victim? Gluten free Lemon Rosemary Mini Muffins made with coconut flour.

When I was in New York a couple of weeks ago, I found a raw, vegan, gluten free granola made of mulberries and walnuts. It was absolutely delicious, though just a bit sweet for my palate.

These hearty breakfast bars remind me of a granola bar or an omega-3 packed power bar. They’re filling and tasty.

These gluten free carrot muffins make a great addition to any brunch menu, though especially one for Mother’s Day.
These lightly sweetened muffins are made with high fiber coconut flour. Don’t let all that healthy stuff scare you off though, they’re mighty tasty. And with yacon sweetening them, they’re not too sweet. If you want to replace the yacon with agave your muffin will be just a bit sweeter. Chia seeds are my new favorite food!
Rich in fatty acids, these seeds contain more omega-3′s than any other vegetarian source. They are also quite high in anti-oxidants, minerals and fiber. Further, I find that they are quite soothing for my digestive system (and I’m always looking for a boost in that realm).
