Fresh cranberry sauce made with only 4 ingredients, no sugar.
I’ve had cranberry sauce on my mind. So I researched cranberry sauce recipes, and found that most have anywhere from ¼ to 1 ¾ cups of sugar. I like a tart cranberry sauce, one that almost makes my mouth pucker, so I developed this stevia and fruit-sweetened cranberry sauce. Way back when, in 1997, during the dark ages of gluten free, I was diagnosed with celiac disease. Now, 14 years later, this disease has had a devastating effect on my family –my mother has celiac, my sister has it, even my 12 year old son was diagnosed with celiac when he was 3 years old. My husband loves this simple, moist gluten free Cherry Apricot Cake. I make sure to use organic dried fruit in this dessert since pesticides levels tend to be high in conventional cherries and apricots and more concentrated in dried fruits. I chose to go with a messy “action” photo of this crumble to demonstrate just how much my husband liked it! He came home from work and devoured the section you see missing above. I was somewhat surprised since it was another one of my experiments making a purely fruit sweetened dessert.

Well, Mother’s Day was gorgeous. A warm and balmy 70°, we went for a lovely hike and after that, I prepared a big dinner for my husband, the boys, our friends Chris and Larry and their little ones. This is one of my fall favorites. I started making it years ago when we lived in New York. This dish showcases squash as great comfort food for the whole family.
Squash with Cherries
1 large butternut squash, peeled, cut into one inch cubes
½ cup dried cherries
3 vanilla beans
3 cinnamon sticks
10 slivers lemon peel
1 cup apple juice
½ teaspoon celtic sea salt
Toss ingredients together in an 9 x 13 inch baking dish

My boys love this salad. Packed with fruit and full of good greens, they just can’t say no to this one.
Cherry Orange Salad
4 cups mesclun greens
3 oranges, sliced into triangle wedges
1 cup cherries, pitted and cut in half
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Place greens, orange triangles and cherries in a medium salad bowl
Drizzle with olive oil and vinegar
Toss and serve
This gluten-free salad is a hit at barbecues, picnics and potlucks.
