<p>While Ina's recipe for Perfect Roast Chicken calls for wheat flour, chicken stock and butter, mine is a tad simpler and gluten free as well.  My boys love this roasted chicken.<br />

<li class="ingredient">freshly ground black pepper</li>
<li class="ingredient">1 bunch fresh thyme</li>
<li class="ingredient">1 lemon, halved</li>
<li class="ingredient">1 head garlic, cut in half crosswise</li>

<li class="instruction">Preheat oven to 425°</li>
<li class="instruction">Remove chicken giblets and rinse chicken inside and out</li>
<li class="instruction">Pat chicken dry</li>
<li class="instruction">Place chicken in a <a href="http://www.amazon.com/gp/product/B0011E75U2/ref=as_li_ss_tl?ie=UTF8&tag=elanaspantryc-20&linkCode=as2&camp=217153&creative=399349&creativeASIN=B0011E75U2" target="_blank">9x13 inch Pyrex baking dish</a><img src="http://www.assoc-amazon.com/e/ir?t=&l=as2&o=1&a=B0011E75U2&camp=217153&creative=399349" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" /></li>
<li class="instruction">Liberally salt and pepper inside of chicken</li>
<li class="instruction">Stuff cavity with bunch of thyme, both halves of lemon and all garlic</li>
<li class="instruction">Brush outside of chicken with olive oil and sprinkle with salt and pepper</li>
<li class="instruction">Tie legs together with kitchen string and tuck wings under body of chicken</li>
<li class="instruction">Place each onion quarter into a corner of dish</li>
<li class="instruction">Roast chicken for 1 ½ hours or until juices run clear</li>
<li class="instruction">Allow to cool slightly and serve</li>

<p>Last weekend, between all of my writing deadlines, I snuck out of the house, away from the computer to meet up with <a target="_blank" href="http://www.spunkyfamilyjournal.blogspot.com/">Kelly and her family</a> at the <a target="_blank" href="http://www.boulderfarmers.org/">Boulder Farmer's Market</a>.  We grabbed some grub from the market, splashed around with her gorgeous daughters in the <a target="_blank" href="http://en.wikipedia.org/wiki/Boulder_Creek_(Colorado)" rel="nofollow">creek</a>, then walked around downtown together for a while.</p>
<p>How refreshing!  I hadn't been out of the house for that long in a while, and Kelly, her husband <a target="_blank" href="http://www.amazon.com/gp/product/0982781105?ie=UTF8&#038;tag=elanaspantryc-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=0982781105">Andrew</a><img src="http://www.assoc-amazon.com/e/ir?t=elanaspantryc-20&#038;l=as2&#038;o=1&#038;a=0982781105" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" /> (an author in his own right) and their girls were so fun to be with.  The outing totally took my mind off work, and I'm really looking forward to getting together with all of them again.  Below is my version of Kelly's delightfully delicious gluten free chicken meatballs.</p>

1 cup zucchini, chopped (about 1 zucchini)<br />
1 cup carrots, chopped (about 2 carrots)<br />
½ cup parsley, coarsely chopped<br />
3 medium cloves garlic<br />
¼ cup <a href="http://www.shareasale.com/r.cfm?b=215045&u=412167&m=25930&urllink=&afftrack=" title="buy gluten free blanched almond flour online" target="_blank">blanched almond flour</a><br />
1 egg<br />
1 pound boneless skinless chicken breasts<br />
1 teaspoon <a href="http://www.elanaspantry.com/ingredients/celtic-sea-salt/">celtic sea salt</a><br />
½ teaspoon ground pepper<br />
¼ teaspoon chili powder</p>
<ol>
<li>Preheat oven to 350°</li>
<li>In a food processor, pulse together the zucchini, carrots, parsley and garlic</li>
<li>Add almond flour, egg, and chicken</li>
<li>Then add salt, pepper and chili powder and process until thoroughly combined</li>
<li>Drop tablespoon sized balls of the chicken mixture onto a parchment lined baking sheet</li>
<li>Bake meatballs for 20 to 25 minutes</li>
<li>Serve</li>

<p>I serve these meatballs over <a href="http://www.elanaspantry.com/chicken-noodle-soup/">(gluten free) homemade Zucchini Noodles</a>, with the Tomato Sauce recipe from <a target="_blank" href="http://www.amazon.com/gp/product/158761345X?ie=UTF8&#038;tag=elanaspantryc-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=158761345X" target="_blank" title="buy The Gluten-Free Almond Flour Cookbook by Elana Amsterdam online"><em>The Gluten-Free Almond Flour Cookbook</em></a><img src="http://www.assoc-amazon.com/e/ir?t=elanaspantryc-20&#038;l=as2&#038;o=1&#038;a=158761345X" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" />, though you can serve them over anything you like!  I have found that the Zucchini Noodles taste even better if you toss them in a bit of olive oil and tomato sauce and let them sit and marinate for an hour on the counter.  Then top with these gluten-free meatballs.  Then yum.</p>

<p>This Rosemary Lemon Chicken has become my go to <a target="_blank" href="/category/entrees/">dinner</a> dish this summer.  In fact, I've been making it a couple of times a week and loving it, as has my family --children included.  It's super easy to make, very healthy and fabulously fresh and delicious with hints of garlic, lemon and rosemary complementing the flavor of grilled chicken.</p>

1 pound skinless, boneless chicken breast<br />
2 tablespoons <a href="http://www.amazon.com/gp/product/B0015MHA50?ie=UTF8&tag=elanaspantryc-20&linkCode=as2&camp=1789&creative=390957&creativeASIN=B0015MHA50" target="_blank">olive oil</a><img src="http://www.assoc-amazon.com/e/ir?t=elanaspantryc-20&l=as2&o=1&a=B0015MHA50" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" /><br />
¼ cup lemon juice<br />
2 cloves garlic, pressed<br />
¼ cup fresh rosemary, minced<br />
½ teaspoon <a href="http://www.elanaspantry.com/ingredients/celtic-sea-salt/">celtic sea salt</a></p>
<ol>
<li>In a medium bowl, combine olive oil, lemon juice, garlic, rosemary and salt</li>
<li>Rinse chicken breasts, pat dry and place in an <a href="http://www.amazon.com/gp/product/B000MFBXOK/ref=as_li_ss_tl?ie=UTF8&tag=elanaspantryc-20&linkCode=as2&camp=217153&creative=399349&creativeASIN=B000MFBXOK" target="_blank">7x11 inch Pyrex baking dish</a><img src="http://www.assoc-amazon.com/e/ir?t=&l=as2&o=1&a=B000MFBXOK&camp=217153&creative=399349" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" /></li>
<li>Pour marinade over chicken, cover and refrigerate for at least 30 minutes or up to 6 hours</li>
<li>Heat grill and cook chicken for 5-7 minutes per side until browned and cooked in the center</li>
<li>Serve</li>

<p>I can tell this Green Chicken Soup is going to become one of my go to dishes in no time at all.</p>
<p>I love this soup because it is an easy way to take in powerfully nutritious greens. While I love my green juices in theory, in reality, my stomach doesn't always agree with them, especially when it's cold outside. That's when it's time to make Green Chicken Soup. Somehow, the carrots and kale give the soup a delicious sweet flavor, which makes this high protein, gluten free soup very grounding, and even more comforting than it already is.</p>

2 quarts chicken stock<br />
1 bunch kale, <a href="http://www.elanaspantry.com/mckale/" title="learn how-to chop and store kale">chopped</a><br />
3 carrots, sliced<br />
1 cup shiitake mushrooms, sliced<br />
1 cup shredded chicken (optional, though nice)</p>
<p>If you are starting entirely from scratch and <a href="http://www.elanaspantry.com/how-to-roasted-chicken-stock/">making your own Roasted Chicken Stock</a>, then after you have roasted the chicken for your stock, pick the meat from the bones and set aside in the fridge --you will add it to the finished soup later.</p>
<ol>
<li>Place chicken stock in a soup pot over medium heat, reserving 2 cups stock</li>
<li>Take reserved stock and blend it with kale in a <a href="http://www.amazon.com/gp/product/B0018QOG6O?ie=UTF8&tag=elanaspantryc-20&linkCode=as2&camp=1789&creative=390957&creativeASIN=B0018QOG6O" target="_blank">Vitamix</a><img src="http://www.assoc-amazon.com/e/ir?t=elanaspantryc-20&l=as2&o=1&a=B0018QOG6O" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" />, until smooth and creamy</li>
<li>Pour kale-stock mixture into pot of chicken stock</li>
<li>Add carrots and mushrooms (and shredded chicken if you have it)</li>
<li>Cook for 30 minutes, or until carrots are tender</li>
<li>Serve</li>

1 tablespoon <a href="http://www.elanaspantry.com/ingredients/celtic-sea-salt/">celtic sea salt</a><br />
1 head garlic<br />
½ cup orange juice<br />
½ cup water<br />

1 tablespoon <a href="http://www.morethanalive.com/Arrowroot-powder" target="_blank">arrowroot powder</a><br />
8 ounces kumquats, unpeeled</p>
<ol>
<li>Rinse the chicken and pat dry</li>
<li>Place the chicken breast side up in a <a href="http://www.amazon.com/gp/product/B0011E75U2/ref=as_li_ss_tl?ie=UTF8&tag=elanaspantryc-20&linkCode=as2&camp=217153&creative=399349&creativeASIN=B0011E75U2" target="_blank">9x13 inch Pyrex baking dish</a><img src="http://www.assoc-amazon.com/e/ir?t=&l=as2&o=1&a=B0011E75U2&camp=217153&creative=399349" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" />, then rub with oil and sprinkle with salt</li>
<li>Stuff the head of garlic into the cavity of the chicken along with a couple of kumquats</li>
<li>In a large bowl, combine the orange juice, water, agave and arrowroot</li>
<li>Pour the orange juice mixture into the baking dish around the chicken</li>
<li>Place the kumquats in the dish</li>
<li>Bake at 425° for 20 minutes</li>
<li>Lower heat to 375° and continue to roast the chicken until it is cooked through, about 40 minutes</li>
<li>Remove from oven and serve</li>
</ol>

<p>The food was so good that there was not enough to go around.  Never have I seen my boys gobble up fish so quickly.  This is a very family friendly cookbook and frankly, I cannot say enough good things about it.  Stay tuned and I will share my version of Jaden's Kabayaki Sauce in an upcoming post.</p>
<p>Meanwhile, enjoy this hearty soup.  Tis the perfect season for it.</p>

1 fresh thumb-sized piece of ginger, sliced into thin coins<br />

6 ounces leftover chicken<br />
1 cup mushrooms, rinsed, drained and sliced in half lengthwise<br />

2 tablespoons lime juice<br />
&frac14; cup fresh cilantro, minced</p>

<li>In a pot, bring chicken stock and ginger to a boil, then reduce heat to low and simmer for 5 minutes</li>
<li>Stir in coconut milk, fish sauce, agave, chicken, mushrooms and carrot</li>
<li>Just before serving, stir in lime juice and cilantro</li>

<p>It's a gray day here in Boulder and I decided some soup would be in order.  Chicken Noodle Soup to be exact.  So what's a gluten free grain free girl to do for noodles?  Zucchini.  Yes, <a target="_blank" href="http://en.wikipedia.org/wiki/Do_it_yourself" rel="nofollow">DIY</a> zucchini noodles.</p>
<p>This recipe is super easy if you have <a target="_blank" title="homemade chicken stock at elana's pantry" href="http://www.elanaspantry.com/how-to-roasted-chicken-stock/">chicken stock</a> on hand.  I keep several jars in the freezer and try to have one in the fridge ready to go as well.  Just dice up some carrots, celery and other veggies of your choice and throw in those yummy zucchini noodles and you've got some good old fashioned, yet healthy modern chicken soup.</p>

<p>It's wonderful to be back at home with my family and kitchen.  I've made myriad soup stocks these last few days in order to help my husband and myself recuperate from the sniffles we each seem to have picked up last week.  We're recovering quite quickly.</p>
<p>To create a bit of variety, I decided to make a roasted chicken stock last night and of course consulted one of my favorite books, <a target="_blank" href="http://www.amazon.com/gp/product/0743246268?ie=UTF8&#038;tag=elanaspantryc-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=0743246268"><em>Joy of Cooking</em></a><img src="http://www.assoc-amazon.com/e/ir?t=elanaspantryc-20&#038;l=as2&#038;o=1&#038;a=0743246268" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" />.  The recipe below is based upon the one in that book.</p>

1 chicken carcass (I made <a href="http://www.elanaspantry.com/chipotle-orange-chicken/">Chipotle Orange Chicken</a>; used the carcass after we dined on the meat)<br />
3 quarts cold water<br />
1 onion, halved<br />
4 carrots, cut into 2 inch pieces<br />
10 cloves garlic, no need to peel<br />
&frac14; cup parsley, finely chopped<br />
10 sprigs fresh thyme<br />
5 celery tops (the leaves and ribs from the inside of a bunch of celery)<br />
2 bay leaves</div>

<li>Place the chicken carcass in a <a target="_blank" href="http://www.amazon.com/gp/product/B00005AL64/ref=as_li_ss_tl?ie=UTF8&#038;tag=elanaspantryc-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=B00005AL64">large stockpot</a><img src="http://www.assoc-amazon.com/e/ir?t=elanaspantryc-20&#038;l=as2&#038;o=1&#038;a=B00005AL64" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" /> with the water</li>
<li>Bring pot to a boil and then reduce to a simmer</li>
<li>Meanwhile, place onion, carrot and garlic cloves on a parchment lined baking sheet</li>
<li>Roast at 400&deg; for one hour</li>
<li>Add roasted vegetables to stock, then add parsley, thyme, celery and bay leaves</li>

<li>Rinse chicken breasts and pat dry with a paper towel</li>
<li>Place chicken in a <a href="http://www.amazon.com/gp/product/B0011E75U2/ref=as_li_ss_tl?ie=UTF8&tag=elanaspantryc-20&linkCode=as2&camp=217153&creative=399349&creativeASIN=B0011E75U2" target="_blank">9x13 inch Pyrex baking dish</a><img src="http://www.assoc-amazon.com/e/ir?t=&l=as2&o=1&a=B0011E75U2&camp=217153&creative=399349" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" /></li>
<li>Pour orange juice over chicken breasts</li>
<li>In a small bowl, combine garlic, herbes de provence, agave, salt and chipotle, then rub mixture onto chicken breasts</li>
<li>Marinate chicken in refrigerator, time permitting for up to 5 hours</li>
<li>Place chicken breasts on a plate, and reserve marinade</li>
<li>Grill each side of chicken on barbecue until chicken is cooked through</li>
<li>Cook marinade, bringing to a boil, then reduce heat and cook for 10-15 minutes</li>
<li>Serve chicken with marinade</li>
