It’s that time of year again –Purim. Which means time for Nut Free Chocolate Hamantaschen. This year because so many of you requested it on my Facebook page, I’ve developed Hamantaschen that are not only gluten and grain-free, they are nut-free as well.
Making gluten-free cookies without grains, nuts, butter, and sugar took quite some time to perfect. While I typically use almond flour to make cookies here, I use coconut flour –a very dense flour that is highly absorbent and soaks up tons of liquid and fat. In my experience, coconut flour yields fantastic muffins, cakes, and baked goods. This is the first time that I have developed a gluten-free cookie recipe using coconut flour.

My mother-in-law (aka Grandma Marylyn) is obsessed with all things crispy, crunchy, and Paleo. Like me, she has celiac disease and has followed a strict gluten-free diet for years. I created this Crispy Chocolate Chip Cookie recipe just for her. Grandma Marylyn is a huge fan of my Cranberry Chocolate Biscotti, as well as my Chocolate Orange Scones, and presents me with freshly made batches of each of these every time we have a visit.
Grandma has been asking me for years to develop a thin and crispy cookie recipe. She has no idea that I’ve created these Paleo chocolate chip cookies for her!

Mint Chip Protein Shake, full of hemp seeds and kale to power you through the day.

A quick and easy, dairy free, vegan chocolate pudding for your Valentine.

Homemade and dairy free Peppermint Hot Chocolate to keep you warm and cozy on a cold winter’s night.

These gluten free Goji Power Bars were a hit at the gym the other day.

These healthy and simple energy bars are packed with energy.
Apricot Power Bars are a great grab and go breakfast or the perfect pick me up on the way home from the gym. Kid-friendly (with white chocolate) and Paleo-friendly (with dark chocolate, or no chocolate at all) I’ve made these gluten free bars each and every way.

This Coconut Chocolate Chip Ice Cream is the perfect refreshment for a hot summer day. Since every child in the neighborhood seems to be at my house at present, bouncing on our trampoline, it is going to make the perfect afternoon snack in a few short minutes.
It’s fun (and super easy) to make dairy free ice cream from coconut milk. Low in sugar, and high in protein and good fat, I feel great about feeding it to the gang.

Summer is definitely here and our house is the place to be. The neighborhood boys congregate on our trampoline –with the sprinklers aimed at it for a good cool down and a great deal of healthy fun.

This high protein, Dairy-Free Chocolate Mousse is made with anti-oxidant rich dark chocolate and contains no dairy products –a double win. I’ve also used coconut palm sugar to sweeten it.

This scrumptious, dairy free, gluten free, vegan, super transportable snack is a power bar in the form of balls. What I love most about it though is the flavor –they taste like raw cookie dough!

I love fudge, I do. The only trouble with it is that most fudge is so sweet I usually feel sick to my stomach after eating it. Needless to say, it’s been years, maybe even decades, since I’ve had fudge.

This recipe was adapted from one by Pam Vagnieres‘ in an article called Make Your Own Protein Bars that ran last year in my local newspaper The Daily Camera. I’ve been on a gluten free Hamantaschen rampage the last few days and these are my latest and greatest. I’ll be serving them at today’s Purim party for my younger son’s Chavurah. We’re having 7 families over in a little while to celebrate Purim and the story of Esther.
