I make these gluten-free coconut macaroons all year round; when I retested it today, my younger son ate an entire baking sheet of these yummy little cookies!
Later than usual this year, my favorite spring holiday falls on April 19th, just over 3 weeks away. I especially enjoy the food traditions surrounding this holiday; during the next couple of weeks I will be posting all of my favorite Passover recipes.

A decadent dessert recipe that’s high protein, gluten free, dairy free and nut free.
Yes, I continue to roll out the coconut flour recipes. This time it’s gluten free Chocolate Cake. I am having a great time experimenting with this unique flour. Coconut flour is my new favorite flour. I have been experimenting with it for a while –that would be more than 2 years. During this time I have come up with some delicious recipes that lend themselves perfectly to coconut flour.

This past fall, the food editor of The Denver Post wrote an article on “addictive” food blogs called Join me as I jump into the blog. Not only was I surprised to find my blog in it, I was dumbfounded that Elana’s Pantry was mentioned in the same piece as Heidi Swanson’s 101 Cookbooks.

I love gluten free granola; sweet and crunchy, it always satisfies a good snack attack.
I also get a kick out of using the term “granola” to ridicule my Boulder brethren. However, when I’m feeling earthy, dousing myself in patchouli (which my husband dislikes to no end) I can easily apply the term to myself –even though I’m more of a yuppie than a hippie. I guess that would make me a yippie.

Yum. My boys love this dish and somehow, a few simple ingredients thrown together look so elegant and appetizing. This easy snack for two takes mere minutes to make.
Yogurt with Orange and Coconut
2 cups yogurt (I prefer Organic Nancy’s Whole Milk Yogurt)
2 oranges, peeled and sliced
¼ cup coconut flakes
Take out 2 medium bowls and place orange slices in each one
Spoon 1 cup of yogurt over orange slices in each bowl
Sprinkle concoction with coconut flakes
