Nettles Pesto

A giant stinging nettles bush climbs up the side of the little red barn in my backyard.  Although we’ve been in this house for 9 years, it’s taken me half that time to pay any mind to it.

Herb Gravy

Last weekend my in-laws came out to Boulder to visit and I used them as guinea pigs for this new gluten free Herb Gravy.  Thankfully this gravy passed the in-law test served over Mashed Cauliflower.  My husband and children liked it too!

Creamy Cranberry Dressing

This super tart cranberry dressing is the perfect gluten free addition to any fall meal, and is ideal for Thanksgiving.  Cranberries are a superfood, rich in antioxidants.  I like to sprinkle fresh cranberries on my salad when I use this dressing.  Because they are so mouth-puckering and tangy, I spare my husband and children, by using fruit sweetened, dried cranberries as a garnish on their salads, rather than the fresh ones.

Chopping Board Pesto

My garden is flourishing and the basil plants are doing particularly well.  Hence pesto, gluten free, dairy free, chopping board pesto.  A couple of years ago, I saw a recipe in the local paper for a chopping board pesto, and then just the other day, my friend the fabulous Patrick reminded me about making pesto using this method.

My favorite way to eat this delicious green stuff is on a gluten free (of course) cracker.  Enjoy!

Homemade Goat Cheese

I made my own raw goat cheese from scratch!  The amazing Patrick brought over some raw goat’s milk from one of his farm friends and that’s where it all began…

And now I can say I’m totally digging this homemade goat cheese, it’s deliciously addicting –at least for me.  We’re back from California, hence the previous sentence using words such as “totally digging.”

Beet Maror

Making maror for your Passover Seder is a cinch (even though it can be just a tad dangerous).

Let me explain… While DIY maror is a lot of fun, be sure to proceed with caution.  I make my maror in the food processor; danger can arise when you open the lid and the trapped horseradish fumes escape up your nostrils –and severe sinus relief (or burning) can occur.  So be careful!

Marcona Almond Mayonnaise

This vegan mayonnaise has quickly become a family favorite.  I based the idea on a recipe I found in an old issue of Martha Stewart Living.  I happened upon an interesting recipe for a peanut salad dressing, made several adaptations until I ended up (somewhat accidentally) with this scrumptious gluten free, egg-free vegan mayo which is delicious on my Kaleslaw.

Creamy Onion Salad Dressing

This Creamy Onion Salad Dressing does have a bit of a zing to it, I admit.  I like it though, as it’s somewhat warming during the cold winter spell we’re having.  My younger son liked this gluten free dressing so much that he not only ate it on his salad last night, he drizzled it over his chicken, declaring it a winner.

Tangy Peanut Sauce

My boys and I love eating this sauce over fish and chicken.  It’s also great on top of salads.  Now that we’re settled back in after a wild weekend that took us straight from Blogher into Yom Kippur, I will be making this to serve with our dinner tonight.  I’ll serve it over salmon and greens and I know that the boys will lap it up, as they always do.

Creamy “Ricotta” Dip

Last night I made this delicious vegan “ricotta” dip for my parents who are in town visiting us.  The boys and I are having a blast with them, though I am having an especially great time, since I have extra mouths to feed, which means more guinea pigs to test my creations!

Easy Avocado Dip

This is a super easy avocado dip that you can whip up in mere minutes.  There is no chopping (of herbs) required, because it is made with spice.

When I don’t have a lot of time to make dinner, this is a go to dish.  I get one of the boys to do the avocado cutting and scooping while I chop up carrots and celery to accompany this dip.  It’s a nice filling side along with a main dish and salad.
