Blueberry French Toast Casserole made with Paleo Bread is a mouthwatering Paleo Mother’s Day treat for the whole family.

Use vegan Pumpkin Whipped Cream on gluten free pancakes, muffins and cupcakes.

The idea to make these gluten free Blueberries and Cream Cupcakes came from the book Martha Stewart’s Cupcakes. You can view her original recipe over at ivillage.com. While testing, the boys and I were referring to these yummy little gluten free treats as blueberry shortcake cupcakes and as you can imagine, the 3 of us enjoyed every bite.

Justine, my new pen pal in San Francisco, recently went gluten-free. We have been corresponding about her quest to find a good gluten free pie crust for the holidays. Enjoy this gluten free cream cheese frosting on carrot cake or banana bread.
Crream Cheese Frosting
¾ cup heavy cream
1 cup cream cheese
¼ cup agave nectar
1 tablespoon vanilla extract
Whip heavy cream until stiff
In a separate larger bowl, whip cream cheese until smooth, then blend in agave and vanilla
With a rubber spatula, gently blend whip cream into cream cheese mixture
