<p>This quick and easy Roasted Cauliflower soup recipe is one that I found in a recent issue of <a target="_blank" href="http://www.bonappetit.com/recipes/2011/10/cauliflower-soup-with-chive-oil-and-rye-crostini">Bon Appetit</a>. Except their recipe had butter and heavy cream; I've <a target="_blank" href="http://en.wikipedia.org/wiki/Paula_Deen" rel="nofollow">de-Paula Deened</a> this recipe so that it is the pure delicious essence of a vegetable without all kinds of unnecessary other ingredients and flavors.<br />

<li>Rub cauliflower with 2 tablespoons olive oil and sprinkle with salt</li>
<li>Add ½ cup water to the dish</li>
<li>Bake uncovered at 350&deg; for 1 ½ hours, or until a knife cuts easily through the core</li>
<li>Remove cauliflower from oven and allow to cool</li>
<li>Coarsely chop and set aside</li>
<li>Heat remaining 2 tablespoons olive oil in a large saucepan over medium heat</li>
<li>Add onion and cook until soft and translucent, about 15 minutes</li>
<li>Add cauliflower and 4 cups water or stock</li>
<li>Simmer until cauliflower is very soft, about 10 minutes</li>

<p>Cauliflower is one of my favorite foods. A <a target="_blank" href="http://en.wikipedia.org/wiki/Cruciferous_vegetables" rel="nofollow">cruciferous vegetable</a>, it is full of anti-oxidants, anti-inflammatory compounds and healthy fiber. </p>

<p>These rich and moist coconut bars are made of not one, but three different forms of scrumptiously healthy coconut, including shredded coconut, coconut oil and coconut milk in their ingredients list.</p>
<p>I have <a target="_blank" href="http://glutenfreeeasily.com/about/">Shirley</a> at <a target="_blank" title="gluten free easily" href="http://glutenfreeeasily.com/">Gluten Free Easily</a> to thank for this recipe as it is based upon her famous gluten free <a target="_blank" title="crustless coconut pie recipe" href="http://glutenfreeeasily.com/crustless-coconut-pie-for-holiday-food-fest/">Crustless Coconut Pie.</a> I'm a big fan of Shirley's crustless pie recipes. They're perfect when I'm looking for a quick and easy, yet simply tasty, gluten free dessert.</p>
<p>I find that this this coconut bar recipe tastes a bit like a macaroon bar. If you want to jazz up your coconut bars and get really decadent, try drizzling them with dark chocolate.<br />

Leslie asked me for an eating plan that she could try for one week to see if the symptoms in her hands and other parts of her body would change. One week is probably not long enough (30 days is optimal) for seeing results from a change in diet. <p>Some of the recipes above might not be super strict Paleo, however if you make quick and easy substitutions they can be. All are grain free and primal; they are Paleo friendly as well.</p>
<p>For the snack section of this plan, I have listed the lower glycemic fruits that work best for me. If you like to eat sweeter fruits, feel free to add those in to your plan. However, if you have trouble with sugar, it may be best to stick with less fruit and low glycemic at that.</p>

<p>I really enjoy using <a href="http://www.elanaspantry.com/ingredients/blanched-almond-flour/">almond flour</a> --<a href="http://www.elanaspantry.com/why-almond-flour/#almonds">almonds</a> are a superfood and highly nutritious. However, every now and then, someone requests a <a href="http://www.elanaspantry.com/flourless-chocolate-banana-cake/">nut free dessert recipe</a> for some type of gluten free baked good. At other times, folks are looking for an <a href="http://www.elanaspantry.com/marcona-almond-mayonnaise/">egg free recipe</a>.</p>
<p>There are as many allergies out there as there are colors in the rainbow. This brownie recipe is for all the nut free, egg free, refined sugar free, gluten free, primal vegans in my life. You keep me on my toes! And I love it.</p>
<p>This recipe uses <a target="_blank" href="http://www.sunbutter.com/products-organic.php">sunflower seed butter</a>, which is actually similar to a nut butter (though nut free). Sunflower seed butter is gluten free, high protein and made from highly nutritious sunflower seeds --you didn't think I was going to use rice flour, did you?! I'm still as grain free as I've ever been since I gave up grains 11 years ago. All of the recipes on this website are <a href="http://www.elanaspantry.com/gluten-free-recipes/">gluten <em>and</em> grain free recipes</a>.</p>
<p>These brownies are based on a <a target="_blank" href="https://www.facebook.com/notes/amy-jelley/chocolate-brownies-egg-dairy-nut-and-grain-free/313009928722262">gluten free brownie recipe</a> that <a target="_blank" href="https://www.facebook.com/people/Amy-Jelley/856390076">Amy Jelley</a> posted on my <a target="_blank" href="https://www.facebook.com/elanaspantry">facebook page</a> a couple of weeks ago. Thanks Amy! Her recipe used a ½ cup of honey which is a little much for where my blood sugar is at these days; so I decreased the amount of honey and added in some xylitol and stevia. I also increased the fat and made a couple of other minor changes to the recipe along the way.</p>
<p>This is a very fudgey brownie --it won't seem totally cooked through when you pull it from the oven. I took mine out when the edges were just about to burn, that was how I determined it was done.<br />

<p>During the holidays I'm <em>always</em> looking for yummy treats to eat that won't leave me with a high-carb hangover. This paleo dessert recipe for a moist, gluten free fruitcake fits the bill. Sweetened with one tablespoon of coconut sugar, along with dates, raisins and dried cherries, my Paleo version of this classic treat is great with a cup of tea, <a href="http://www.elanaspantry.com/dandelion-root-coffee/">Dandelion Root Coffee</a>, or makes a beautifully simple gift to give to friends and neighbors during the holidays.</p>
<p>According to <a target="_blank" href="http://en.wikipedia.org/wiki/Fruitcake">Wikipedia</a>, fruitcake is:</p>
<blockquote><p>A cake made with chopped candied fruit and/or dried fruit, nuts, and spices, and (optionally) soaked in spirits. A cake that simply has fruit in it as an ingredient can also be colloquially called a fruitcake. In the United Kingdom, certain rich versions may be iced and decorated. <p>Along with visions of wacky people, the word "fruitcake" can also conjure thoughts of dry, icky cake. <p>Peppermint Hot Chocolate is easy to make, and far better than the instant hot chocolate that comes in a package, which is loaded with sugar and definitely not <a href="http://www.elanaspantry.com/tag/dairy-free/">dairy free</a>. Additionally, I find this soothing and healthy beverage to be a great substitute for all of the peppermint candy floating around this time of year.</p>
<p>I make this dairy free hot chocolate with coconut milk, and thankfully, it does not contain a coconut-ish flavor; it is a rich and chocolatey hot beverage. Use a high quality organic chocolate for a healthier and tastier result.</p>
<p>This Peppermint Hot Chocolate recipe is easy to make and full of nutritious ingredients --just don't tell your children!<br />

<li>Add squash cubes, apple slices and cinnamon and cook for 10 minutes</li>

<li>Reduce heat and simmer for 30 minutes</li>

<p>Here are some notes on this recipe:</p>

<li>Feel free to make this soup with other types of winter squash such as pumpkin, acorn, delicata, etc.</li>
<li>I used a 2 ½ pound butternut squash for this recipe (weight is prior to peeling and de-seeding)</li>
<li>Experiment with other warming spices such as ginger and nutmeg</li>
<li>I used Braeburn apples in this soup; feel free to experiment with other types of apples</li>
</ul>
<p>Squash is a very healthy, hearty, nutrient dense vegetable, full of carotenoids and other beneficial antioxidants. Further, it is thought that squash is both anti-inflammatory and helpful in regulating blood sugar.</p>
