The spring holidays (Easter and Passover) mark my favorite time of year. The ground begins to thaw, buds make their way up through the soil and the ground comes alive again. Year after year, my garden is reborn after a deep sleep –signs of transformation abound. As everything in my yard wakes up, a renewed hope and the promise of abundance emerge as well. Gefilte Fish

This recipe is based on one by Ellyn Goodrich at epicurious.com, called “Alaskan Halibut and Salmon Gefilte Fish Terrine.”  While Goodrich’s recipe makes a gefilte fish “loaf,” mine is for traditional (yet gluten free) gefilte fish balls (like my Bubby made) only with more vegetables, so that they are a bit lighter and healthier than the standard gefilte-fare.

Passover Menu

My mother and father will be spending Passover with us and I am really looking forward to it.  Mom and I will be in the kitchen all day today preparing for our gluten free Seder –she has celiac too, as do my older son, sister and mother-in-law.  Gluten free is a family affair for us.

Here’s what we’ll be making for Passover 2010.  Pretty much my standard Passover Seder menu.

Grilled Chipotle Orange Chicken

My younger son is a big fan of my Chipotle Orange Chicken and asks me to make it on a weekly basis.  Since it’s perfect grilling weather, I decided to make a version of this recipe with chicken breasts that could easily be thrown on the grill –just in time for when they arrive home from baseball practice.

Balsamic Roasted Turkey with Apple Stuffing

This week, I have been testing the Thanksgiving menu that I shared with those of you signed up for my newsletter. We had almost a full Thanksgiving dinner last Wednesday and leftovers Thursday and Friday.
