I’ve followed a strict grain-free diet since 2001. Still, I eat pasta every week. How’s that possible? Zucchini noodles, otherwise known as zoodles.
There’s nothing like spaghetti with meatballs, or Bolognese sauce. When you know how to make zucchini noodles, there’s no need to be deprived of such classic dishes! Trading processed food (high-carb pasta) for another serving of vegetables? Now that’s healthy and nutritious. It’s a great way to eat whether you’re grain-free or not. Zoodles rule.

My version of Perfect Roast Chicken is based upon one from Ina Garten’s Barefoot Contessa Cookbook. This go to dish is something I make at least once a week, after which I generally use the carcass for chicken stock. This high protein salmon dish with Roasted Red Pepper Tomato Soup from Pacific Foods was a big hit with my husband, and children as well.
The sweet, smoky taste of the sauce (which simply uses the above soup) along with healthy spinach and salted salmon, results in a sophisticated entree that is not too challenging to make –a lovely dish that will wow your guests.

Yesterday, when I compiled my Rosh Hashanah Menu, I promised y’all that I would give out the recipe for my Stuffed Peppers today, and here they are. I’m glad I made that promise, since it “forced” me to make these gluten free, grain free stuffed peppers for dinner last night, and my husband and I love them. These Green Chili Turkey Burgers are based on a fabulous recipe from Mark Sisson’s Primal Blueprint Cookbook. His recipe is actually called Fried Eggs Over Green Chili Burgers, and is yet another high-protein entree from the king of primal that my entire family enjoyed.

This recipe for quick and easy grilled salmon is based on Kalyn’s Grilled Salmon with Maple Syrup Glaze from Kalyn’s Kitchen. I find that her site is a fantastic source overall, and particularly for protein filled entrees. This Rosemary Lemon Chicken has become my go to dinner dish this summer. In fact, I’ve been making it a couple of times a week and loving it, as has my family –children included. Kumquats are in season right now. What’s a kumquat you ask? Essentially it’s a citrus fruit that closely resembles an orange, though it is much smaller. If you want to know more about kumquats there is a great article over at the Cooking Light website.

There was a shortage of Fish Kabayaki the other night when I made this amazing dish from Jaden’s Steamy Kitchen Cookbook. I used salmon to make this sweet and tangy fish dish and it was phenomenal.

This gluten free Grilled Lemon Chicken recipe from Ina Garten’s Barefoot Contessa cookbook is easy to make and amazingly delicious.
I cut her recipe in half and it was not nearly enough for my family. They licked their plates clean and my little one asked if we could have the chicken again the next night for dinner –and he’s a guy that complains about lack of variety, so you get the idea here.

My younger son is a big fan of my Chipotle Orange Chicken and asks me to make it on a weekly basis. Since it’s perfect grilling weather, I decided to make a version of this recipe with chicken breasts that could easily be thrown on the grill –just in time for when they arrive home from baseball practice.

This may be one of the worst food photos I’ve ever taken, however, this gluten free, grain free chicken and “rice” dish is packed with protein and spicy Mexican flavor. It’s not so easy to take pictures of brown stuff; I could say more, however, I won’t go on; let’s just leave it at that.

With baseball back in the picture and our afternoons filled with practices I find myself looking for quick entrees that offer a lot of protein without a lot of work. This Chipotle Lime Salmon is one of those. My husband loved it, pronouncing it blog-worthy after his first bite.
