I’m a big fan of gluten free cookies, especially gluten free biscotti.
These Paleo friendly gluten free treats are a great addition to a high protein breakfast and also perfectly suited for dunking in healthy coffee for an afternoon snack that won’t leave you dragging. As I type this, my yard is overflowing with dark green leafy vegetables; they are literally taking over our tiny property. So what’s a girl with a garden to do? Every morning I go outside, bowl and scissors in hand, and harvest greens.

This dairy free peanut butter protein shake is a great way to start the day. I like to drink it before I go to the gym –the protein (about 50 grams) gives me energy during my entire workout, and then some.

These peanut butter cookies are gluten free, grain free and vegan to boot. I based them on Heidi’s Peanut Butter Cookie recipe over at 101 Cookbooks, one of my favorite websites. Though I did cut the amount of sweetener in half and make a couple of other changes.

Last night I had a hunkering for gluten free peanut butter cookies. I went over to Elise’s site, Simply Recipes, and found a yummy looking recipe for gluten-filled Peanut Butter Cookies. I experimented a bit, made a couple of changes to her recipe and came up with a nice gluten free cookie dough. These healthy and simple energy bars are packed with energy.

I love a good cool, yet spicy drink in the summer. This Iced Ginger Chai recipe is based on one of my favorite products, Bhakti Chai. It’s heavy on the ginger, cardamom and black pepper which I love.

This Coconut Chocolate Chip Ice Cream is the perfect refreshment for a hot summer day. Since every child in the neighborhood seems to be at my house at present, bouncing on our trampoline, it is going to make the perfect afternoon snack in a few short minutes.
It’s fun (and super easy) to make dairy free ice cream from coconut milk. Low in sugar, and high in protein and good fat, I feel great about feeding it to the gang.

Summer is definitely here and our house is the place to be. The neighborhood boys congregate on our trampoline –with the sprinklers aimed at it for a good cool down and a great deal of healthy fun.

I was working my way through the Cook’s Illustrated website the other night and came across an amazing recipe for Triple Chocolate Espresso Brownies. This high protein, dairy free Chocolate Mousse is made with anti-oxidant rich dark chocolate and contains no dairy products –a double win. I’ve also used coconut palm sugar rather than agave to sweeten it. Many people do not like agave nectar, believing it is an overly processed sweetener (the agave nectar I use is pure and organic). I don’t mind agave, though I thought the palm sugar would be a nice alternative sweetener for those that do.

When I was a child I loved crackers. Still do. I especially loved Wheat Thins. Can’t have those anymore. Solution? I’ve made my own.
