This is a super easy avocado dip that you can whip up in mere minutes. There is no chopping (of herbs) required, because it is made with spice.
When I don’t have a lot of time to make dinner, this is a go to dish. I get one of the boys to do the avocado cutting and scooping while I chop up carrots and celery to accompany this dip. It’s a nice filling side along with a main dish and salad.

This may be one of the worst food photos I’ve ever taken, however, this gluten free, grain free chicken and ”rice” dish is packed with protein and spicy Mexican flavor. It’s not so easy to take pictures of brown stuff; I could say more, however, I won’t go on; let’s just leave it at that.
Since I don’t eat grains, this faux rice is a real treat for me. My husband liked it too.

Here’s a recipe round-up for a healthy high protein, gluten free Mother’s Day brunch. This is a brunch menu that won’t leave you with the dreaded brunch bloat and hangover afterwords.

With a few edits to the classic Cobb, this tasty traditional salad becomes nutritious high protein fare packed with healthy veggies. This Cobb Salad is a great make ahead dish. Prepare individual ingredients earlier in the day or the night before and then assemble the salad just before serving.

The other night while I was tucking in my super snuggly 10 year old into bed, we discussed possibilities for the next night’s dinner.
“Fennel” he suggested, “I really like it because it’s sweet and also very healthy!”

Mushrooms are one of my favorite foods. I bought some recently on a trip to the store, though I had no idea what would become of them.

It has been so hot here –Sunday was a scorching 104 degrees. Because of the toasty weather, I’ve been looking for quick, cool ways to get hits of protein.

It’s too darn hot here to turn on the oven; the high today is supposed to get up to 100°. The solution? Fire up the grill and throw on some chicken breasts ever so briefly. The mustard lime chicken pictured above is a tangy hit of protein on a hot summer’s day.
