I first made this Spicy Chicken with Grilled Lime recipe for a Sunday night dinner when my in-laws were visiting. They were delighted by this easy chicken recipe and impressed with how quickly I was able to throw it together after we arrived home with them from a weekend in the mountains. The best thing about grilled chicken? The grill! As in no messy pans or baking dishes to clean up.

Spicy ginger and tart lime team up to make a mean mocktail.
I don’t drink alcohol, however, I absolutely love fun, girly drinks in fancy glasses. Hence, this deliciously refreshing, non-alcoholic beverage that I am calling a Ginger Lime Mocktail. I think you could also call this sparkling zesty drink liquid superfood. The ginger is full of anti-oxidants, good for digestion and is also anti-viral and anti-fungal. I’m thrilled to be a part of Pacific Natural Foods’ Everyday Chef Challenge! For the first round of the competition, $5 Dinners, Aggie’s Kitchen, Herbivoracious, A Savory Nest and I will be using a “secret” ingredient along with one of Pacific Natural Foods’ broth products *.
The secret ingredient for this round? Mushrooms. I used shiitake, though any type will work for the recipe below. And I have chosen to use their Organic Vegetable Broth.

This sweet, rich yet tart and tangy Key Lime Icing is a cinch to make and has great flavor. I like to pair it with my gluten free Coconut Cupcakes to make Coconut Key Lime Cupcakes.
Key Lime Icing
1 pint heavy cream
½ cup agave nectar or honey
¼ cup lime zest (I use a microplane zester) (3-4 limes)
In a large bowl, whip the cream, agave and lime zest with a hand held mixer
