Spicy Slaw

I’m slightly obsessed with coleslaw these days, especially any coleslaw made with purple cabbage which I find to be delectably sweet and crunchy.  I’m always craving a good crunch in my food.

I like to serve this spicy slaw with my Turkey Burgers from The Gluten-Free Almond Flour Cookbook or my Grilled Chipotle Orange Chicken.

The name of this cucumber salad really could be Bubby’s Cucumber Salad.  I learned to make it from my father’s mother, an immigrant to this country, and an amazing woman.  She helped my Dad’s father run their butcher shop and was quite the business woman from what I can gather.

Radicchio Salad with Frisée and Apples

The other night I had the privilege of eating this amazing gluten free salad at Frasca, a fabulous restaurant in downtown Boulder. Their salad however, had salami, while mine, for a little hit of protein, contains walnuts.

I served this salad with dinner Sunday night while my 3 boys (2 children and husband) watched the NFL playoffs.  Dinner (and this salad) were a hit (even though the Jets lost).

Kaleslaw

My garden is overflowing with kale so I am looking for creative ways to serve it to the boys.  Of course, their favorite kale dish is the Kale Salad with Cranberries, however, we can’t have that every night so I came up with this delicious gluten free Kaleslaw.  The boys liked it and ate some, I myself had about 4 bowls of it –addictive I’d say.

Summer Squash Salad

My husband and I guzzled this summer squash salad last night at dinner.  We had a massive feast of vegetables and salmon (the boys picked at dinner, though did just fine all in all).  Along with the salad, we grilled the salmon, eggplant, red peppers and broccoli.  Fresh fruit for dessert –cherries, apricots and strawberries.

Simple Fruit Salad

My children love to have fruit salad as an after school snack.  I often serve it to them with organic yogurt, adding a bit of vanilla and agave nectar to the yogurt.

No Potato Salad

This healthier gluten free potato salad is perfect for picnics and barbecues.  Replacing potato with cauliflower is a trick that I learned from the “low-carbers.”  And it is a good one!

In the winter, I often make mashed cauliflower in place of mashed potatoes.  Now, in spring, it is wonderful to have this no potato salad made from cauliflower.  We’ll be having it tonight with grilled turkey burgers and green salad from our garden.

Orange Arugula Salad

This delicious salad is full of a variety of flavors.  The arugula is a buttery, bitter green and the oranges are sweet, sour and tangy.  Spiking dinner salads with fruit is a great trick when it comes to getting children enthused about eating their greens.  Works pretty well on green-phobic adults as well.  My boys devoured this salad right alongside my husband and myself the other night at dinner.

Kale Salad with Grapefruit

Take a look at the picture above.  No, that’s not a floating grapefruit. If you look closely, you can see the tip of my younger son’s fingers lifting a grapefruit from the bowl of salad. This quick and easy (and of course gluten-free) salad is delicious anytime of year, though perfect right now as we approach the end of citrus season.

Raw Kale Salad

While the boys were on break during the holidays we got really into kale. My older one prefers his steamed and tops it with ume plum vinegar and toasted sesame oil. The little one, however, joins us in eating my raw kale concoctions.

The 8th graders at Shining Mountain Waldorf School held a huge peach sale this week and we participated by ordering two cases.  Today, the boys and I picked up 40 pounds of luscious local Colorado peaches after dismissal.  Hands and faces sticky with juice, the boys dug in before we made it to the car.

Zucchini overload? I have the answer for you. Zucchini carpaccio. My husband loves this dish. I make it every summer just about this time when we are in zucchini overwhelm. It is quick and easy to make, with somewhat elegant results. And you don’t need fancy equipment (no mandolins used here) just a sharp knife and decent cutting skills.
