Spicy Slaw
Posted on July 26, 2010
I’m slightly obsessed with coleslaw these days, especially any coleslaw made with purple cabbage which I find to be delectably sweet and crunchy. I’m always craving a good crunch in my food. I like to serve this spicy slaw with my Turkey Burgers from The Gluten-Free Almond Flour Cookbook or my Grilled Chipotle Orange Chicken.

Asparagus Basil Salad
Posted on July 1, 2010
This super healthy Asparagus Basil Salad is a not just nutritious, it’s a treat for the palate. Trust me, it’s delectable, especially right now using wonderfully ripe vegetables at peak season. I found this recipe in Sunset Magazine. Actually, I didn’t find it, our family friend Mrs. Rose found it and made it for Mr.

Cucumber Salad
Posted on June 25, 2010
The name of this cucumber salad really could be Bubby’s Cucumber Salad. I learned to make it from my father’s mother, an immigrant to this country, and an amazing woman. She helped my Dad’s father run their butcher shop and was quite the business woman from what I can gather.
Asian Slaw

I am on a coleslaw roll. In fact, my children are so tired of coleslaw that they have begged me to stop making it; I made coleslaw with dinner every night last week and just can’t get enough crunchy cabbage. One afternoon last week, I put out a query on Twitter (my favorite e-venue to

Radicchio Salad with Frisée and Apples
Posted on January 26, 2010
The other night I had the privilege of eating this amazing gluten free salad at Frasca, a fabulous restaurant in downtown Boulder. Their salad however, had salami, while mine, for a little hit of protein, contains walnuts. I served this salad with dinner Sunday night while my 3 boys (2 children and husband) watched the

Kaleslaw
Posted on October 13, 2009
My garden is overflowing with kale so I am looking for creative ways to serve it to the boys. Of course, their favorite kale dish is the Kale Salad with Cranberries, however, we can’t have that every night so I came up with this delicious gluten free Kaleslaw. The boys liked it and ate some,

Summer Squash Salad
Posted on August 10, 2009
My husband and I guzzled this summer squash salad last night at dinner. We had a massive feast of vegetables and salmon (the boys picked at dinner, though did just fine all in all). Along with the salad, we grilled the salmon, eggplant, red peppers and broccoli. Fresh fruit for dessert –cherries, apricots and strawberries.

Raw Kale Shiitake Salad
Posted on June 30, 2009
The other night I went to a fabulous event in Boulder hosted by Bauman College. During this evening one of the graduates from Bauman’s chef program did a great cooking demo for a raw kale salad with shiitake mushrooms (it had a number of other ingredients as well). The next day, I was determined to

Simple Fruit Salad
Posted on May 21, 2009
My children love to have fruit salad as an after school snack. I often serve it to them with organic yogurt, adding a bit of vanilla and to the yogurt. It’s just about fruit season here in Colorado and everything is starting to look luscious. We have strawberries ripening on the plants in the front

No Potato Salad
Posted on May 11, 2009
This healthier gluten free potato salad is perfect for picnics and barbecues. Replacing potato with cauliflower is a trick that I learned from the “low-carbers.” And it is a good one! In the winter, I often make mashed cauliflower in place of mashed potatoes. Now, in spring, it is wonderful to have this no potato

Orange Arugula Salad
Posted on April 24, 2009
This delicious salad is full of a variety of flavors. The arugula is a buttery, bitter green and the oranges are sweet, sour and tangy. Spiking dinner salads with fruit is a a great trick when it comes to getting children enthused about eating their greens. Works pretty well on green-phobic adults as well. My

Kale Salad with Grapefruit
Posted on March 24, 2009
Take a look at the picture above. No, that’s not a floating grapefruit. If you look closely, you can see the tip of my younger son’s fingers lifting a grapefruit from the bowl of salad. This quick and easy (and of course gluten-free) salad is delicious anytime of year, though perfect right now as we

Raw Kale Salad

While the boys were on break during the holidays we got really into kale. My older one prefers his steamed and tops it with ume plum vinegar and toasted sesame oil. The little one, however, joins us in eating my raw kale concoctions. These raw salads are super healthy, crunchy and quite delicious. We are

Cabbage Orange Salad

Unfortunately, the incoming Obama administration has potentially failed those of us that want to see a food revolution. Tom Vilsack, Governor of Iowa (and a good friend of multinational food corporations such as Monsanto) has been nominated Secretary of Agriculture. Rather than the promised change, we are facing more of the same. This is a

Pomegranate Salad
Posted on September 26, 2008
With only two more days until erev Rosh Hashanah I am putting the final touches on the planning phase of our holiday feast. Soon much cooking and celebrating will begin. Today I made this tangy pomegranate salad. During dinner my children coveted the pomegranate seeds and needed a bit of convincing to eat the spicy

Peach Arugula Salad
Posted on September 12, 2008
The 8th graders at Shining Mountain Waldorf School held a huge peach sale this week and we participated by ordering two cases. Today, the boys and I picked up 40 pounds of luscious local Colorado peaches after dismissal. Hands and faces sticky with juice, the boys dug in before we made it to the car.

Zucchini Carpaccio
Posted on August 22, 2008
Zucchini overload? I have the answer for you. Zucchini carpaccio. My husband loves this dish. I make it every summer just about this time when we are in zucchini overwhelm. It is quick and easy to make, with somewhat elegant results. And you don’t need fancy equipment (no mandolins used here) just a sharp knife

Jicama, Beet and Carrot Salad

Don’t try this at home! I highly recommend keeping the animals far away from the food. My little bunny lives in our house –he roams the family room and kitchen and he thinks he’s a dog. He kept me company today during hours of culinary exploration. As I chopped mountains of vegetables, every now and

Cherry Arugula Solstice Salad

The boys were buzzed this afternoon –their hair that is. Now the little baldies will be nice and cool in the warm weather. It hasn’t been all that hot though lately. In fact, we’ve had many cloudy afternoons and so far this summer haven’t made it to the pool yet. I have a feeling that
