This dairy free peanut butter protein shake is a great way to start the day. I like to drink it before I go to the gym –the protein (about 50 grams) gives me energy during my entire workout, and then some.

This Coconut Chocolate Chip Ice Cream is the perfect refreshment for a hot summer day. Since every child in the neighborhood seems to be at my house at present, bouncing on our trampoline, it is going to make the perfect afternoon snack in a few short minutes.
It’s fun (and super easy) to make dairy free ice cream from coconut milk. Low in sugar, and high in protein and good fat, I feel great about feeding it to the gang.

Summer is definitely here and our house is the place to be. The neighborhood boys congregate on our trampoline –with the sprinklers aimed at it for a good cool down and a great deal of healthy fun.

Spicy ginger and tart lime team up to make a mean mocktail.
I don’t drink alcohol, however, I absolutely love fun, girly drinks in fancy glasses. Hence, this deliciously refreshing, non-alcoholic beverage that I am calling a Ginger Lime Mocktail. I think you could also call this sparkling zesty drink liquid superfood. The ginger is full of anti-oxidants, good for digestion and is also anti-viral and anti-fungal. Way back when, in 1997, during the dark ages of gluten free, I was diagnosed with celiac disease. Now, 14 years later, this disease has had a devastating effect on my family –my mother has celiac, my sister has it, even my 12 year old son was diagnosed with celiac when he was 3 years old. This recipe was adapted from one by Pam Vagnieres‘ in an article called Make Your Own Protein Bars that ran last year in my local newspaper The Daily Camera. We had a huge snowstorm here last night and I made my family a batch of this warming Mexican Hot Chocolate. A hot drink is perfect for a cold day, and it’s even better when warming spices such as cinnamon, chili and cayenne are added.

This super tart cranberry dressing is the perfect gluten free addition to any fall meal, and is ideal for Thanksgiving. Cranberries are a superfood, rich in antioxidants. I like to sprinkle fresh cranberries on my salad when I use this dressing. Because they are so mouth-puckering and tangy, I spare my husband and children, by using fruit sweetened, dried cranberries as a garnish on their salads, rather than the fresh ones.

I’m slightly obsessed with coleslaw these days, especially any coleslaw made with purple cabbage which I find to be delectably sweet and crunchy. I’m always craving a good crunch in my food.
I like to serve this spicy slaw with my Turkey Burgers from The Gluten-Free Almond Flour Cookbook or my Grilled Chipotle Orange Chicken.

I hadn’t thought of making coconut milk from shredded coconut until I read Sarma Melngailis’ book Living Raw Food. I cannot recommend this book highly enough. Sarma has great recipes and tons of fabulous information for everyone –you don’t have to be raw to enjoy this book.

Vegan Chocolate Espresso Power Bars made with pecans, dates and decaf espresso.
Who doesn’t enjoy a good power bar? One that is easy to travel with and renders a healthy snack on the go?

Soup mania continues. And this dairy free creamy pumpkin coconut ginger soup hits the spot. I decided I had to make something pumpkin today after making pumpkin pies from my gluten free cookbook (The Gluten-Free Almond Flour Cookbook) and finding myself with a bunch of leftover roasted pumpkin. Peaches are in high season here in Colorado and we are making the most of it. This week I made a gluten free (of course), fruit sweetened, dairy free, vegan Peach Almond Ice Cream.
To increase the peach factor, I diced up more fresh peaches and mooshed them into the ice cream after it came out of the ice cream maker.
