I’m hooked on Kelly Broznya’s perfect new summer cookbook Dairy Free Ice Cream. Since obtaining a copy last week, I’ve been working my way through this dairy free tome, and I’ve already made eight recipes.

Grilled Zucchini

This recipe for Grilled Zucchini is one of my favorites for several reasons.  First, it’s a good way to use up the prolific zucchini of August.  Second, it’s mighty easy to make.  And third, it’s delicious.  Let’s not forget reason number four though –zucchini and summer squash are a healthy side dish for any meal.

Summer Squash Salad

My husband and I guzzled this summer squash salad last night at dinner.  We had a massive feast of vegetables and salmon (the boys picked at dinner, though did just fine all in all).  Along with the salad, we grilled the salmon, eggplant, red peppers and broccoli.  Fresh fruit for dessert –cherries, apricots and strawberries.

Umeboshi Cucumber Dressing

We are having friends over tomorrow evening for a small barbecue and I will be serving this easy, delicious, tangy salad dressing over fresh greens from our garden.

Cherry Arugula Solstice Salad

The boys were buzzed this afternoon –their hair that is. Now the little baldies will be nice and cool in the warm weather.
