Blueberry French Toast Casserole made with Paleo Bread is a mouthwatering Paleo Mother’s Day treat for the whole family.
Mother’s Day is coming up, and what better way to start Sunday than to prepare a batch of this healthy French toast made with my Paleo Bread dipped in a coconut milk-based batter. This Paleo brunch recipe is based on one called Bradley Inn Blueberry French Toast Casserole that I found in our local paper, the Daily Camera, in December 2007.

I’m eating one of these Spicy Power Bars as I type this. I’m slightly obsessed with them. Because they remind me of my past.
About 20 years ago, when I was living in New York City and had just hooked up with my adorable husband, I became very interested in Ayurveda. One of the amazing practitioners that I learned from, Pratima Raichur, had created her own version of a healing tonic, referred to in Ayurvedic circles as chyawanprash. Her product was ... read more →

The creation of this delicious, homemade vanilla almond butter is hardly my own. One of my favorite readers, Courtney, over at benefityourlife.com, gave me several amazing presents during the holidays and one was a bottle of super tasty vanilla almond butter from the lovely Katie Kearney over at naturallynutty.com. Yum!
This is a great product, and when I finished Courtney’s gift and was too impatient to wait for my own order to arrive, I came up with the little treat below. ... read more →

I’m slightly addicted to these Vanilla Roasted Walnuts and so is my husband. They have a hint of sweetness and a nice burst of vanilla goodness. On top of that, Walnuts are a great source of Omega-3′s, have a high antioxidant count and are also beneficial for cardiovascular health. So I’m on the walnut bandwagon.
Here’s the recipe for another gluten free, tasty, higher protein holiday snack with nuts.

My boys love this vegan Strawberry Ice “Cream.” I made a batch and it was gone in a couple of hours. So I made more and my husband got in on the act, consuming his share.
It is made with a coconut milk base and I added quite a bit of vanilla, in hopes of drowning out the coconutty flavor, as I did not want to make a coconut ice cream. I think I succeeded, though you all can be the ... read more →

This is my favorite ice cream. It’s vegan. It’s vanilla. And it’s yummy.
I’ve been making this ice cream for the last couple of years. Way back when in my New York days, my raw food friends turned me on to the fact that cashews make an amazing substitute for dairy. While I love this ice cream and have been known to chow on it late night, be forewarned that my husband (who is my ultimate taste tester) does not like it.

Here are some easy recipes for a gluten-free Memorial Day barbecue.
This year we are laying low on Memorial Day Weekend. The boys are going to run in the Bolder Boulder race and then we’ll probably hang out after that. No big plans for a barbecue or any type of festivities, we are just hoping to recover from our little league baseball fatigue. We have a game every night of the week (and weekend) usually during dinner time, so I am ... read more →

As fall approaches, my attention is shifting to our fruit trees. A few years back we planted a peach and two apple trees along the perimeter of our packed yard; they are now bursting with fruit, as is our dwarf plum. While we eat the peaches and apples straight off the trees, each fall we make a habit of picking the tart little plums and making our own homemade jam from them.
During this last weekend, the boys commenced ... read more →

This is my all time favorite icing recipe. Lately, I’ve been using this vegan chocolate frosting for cakes, cupcakes, and also as a filling between chocolate wafers. My son loves this double chocolate treat –chocolate wafers with chocolate frosting– packed in his school lunch.
I promise, I’ll put chocolate wafers up here on the boards soon. That recipe just needs a few more rounds of testing until it is ready for public consumption!
