The other night I had the privilege of eating this amazing gluten free salad at Frasca, a fabulous restaurant in downtown Boulder. Their salad however, had salami, while mine, for a little hit of protein, contains walnuts.
I served this salad with dinner Sunday night while my 3 boys (2 children and husband) watched the NFL playoffs. Dinner (and this salad) were a hit (even though the Jets lost).

This delicious salad is full of a variety of flavors. The arugula is a buttery, bitter green and the oranges are sweet, sour and tangy. Spiking dinner salads with fruit is a great trick when it comes to getting children enthused about eating their greens. Works pretty well on green-phobic adults as well. While the boys were on break during the holidays we got really into kale. My older one prefers his steamed and tops it with ume plum vinegar and toasted sesame oil. The little one, however, joins us in eating my raw kale concoctions.

The 8th graders at Shining Mountain Waldorf School held a huge peach sale this week and we participated by ordering two cases. Today, the boys and I picked up 40 pounds of luscious local Colorado peaches after dismissal. Hands and faces sticky with juice, the boys dug in before we made it to the car.

Zucchini overload? I have the answer for you. Zucchini carpaccio. My husband loves this dish. I make it every summer just about this time when we are in zucchini overwhelm. Don’t try this at home! I highly recommend keeping the animals far away from the food. My little bunny lives in our house –he roams the family room and kitchen and he thinks he’s a dog.

We had a quiet July 4th celebration with Martha, her daughter Erin and a friend of Erin’s named Sarah Rose. Well, Mother’s Day was gorgeous. A warm and balmy 70°, we went for a lovely hike and after that, I prepared a big dinner for my husband, the boys, our friends Chris and Larry and their little ones. My boys love this salad. Packed with fruit and full of good greens, they just can’t say no to this one.
Cherry Orange Salad
4 cups mesclun greens
3 oranges, sliced into triangle wedges
1 cup cherries, pitted and cut in half
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Place greens, orange triangles and cherries in a medium salad bowl
Drizzle with olive oil and vinegar
Toss and serve
This gluten-free salad is a hit at barbecues, picnics and potlucks.
