Pumpkin Pie Ice Cream

vegan pumpkin pie ice cream

Let us now praise all things pumpkin.  I’m kinda obsessed with gluten free, dairy free pumpkin dishes right now, hence the vegan Pumpkin Ice Cream here, and the Pumpkin Bars earlier this week.  And let us not forget the Pumpkin Pie Muffins of last year either.

This pumpkin pie ice cream is a delicious fall treat whether served at Halloween or Thanksgiving.  For more information on pumpkin mania, check out this funny article from Esquire called Some Pumpkin Flavoring Best Avoided this Halloween.

One more reason I will eventually have to give in and buy an ice cream machine.

  3. Rachel

This looks truly delightful! I look forward to autumn all year long–partially for the pumpkin dishes! Love that there are healthy options to make for my family.

You stole this recipe from me, Elena. ;) Don’t worry, I don’t mind. I have been making this pumpkin ice cream recipe (using all coconut milk) for quite a while now. Thank you for letting us see your version.

  5. I am SO excited to try this! We don´t have an ice cream machine, so hopefully I will be able to get the right texture by freezing and stirring. Thanks so much for sharing!

  6. colormepink

Yum! I’ve been enjoying pumpkin smoothies, this sounds right up my alley.

I don’t know if you’ve gotten much feed back yet, but I’ve noticed and appreciate the related links you’ve been doing the last few posts.

  7. Great recipe, and that book looks fascinating! Can’t wait for some of both!!

I’m debating between your many delicious desserts for my birthday treat this weekend! Might have to serve whatever I make with some pumpkin ice cream!

  9. the blissful baker @ theblissfulbaker.wordpress.com

this looks FANTASTIC. i’ve never had vegan ice cream before, but i LOVEEE pumpkin, so i’m sure i will be crazy about this :)

  10. sas

looking forward to making pumpkin yummyness with all your recent recipes. My husband picked up a big pumpkin today at the farmer’s market. I can’t decide what I’ll make this weekend….

  11. Tamara

Elana, I’ve been making ice cream with cashews since you published your vegan vanilla recipe. I have found that if I soak the cashews overnight before blending them, the nuts soften and blend better, and this eliminates the grittiness I would otherwise get in the ice cream (mind you, I don’t have a Vitamix, so maybe that would make a difference, too).

  12. Rebecca

That looks great! I am trying to find an ice cream maker that’s not made in China, and doesn’t have an aluminum bowl :(

  13. Caitlin

Wow! This sound incredible! Thank you for sharing! :)

  14. michelle carranza @ diariesofmegf.blogspot.com

My kids and I are so excited to try this. An ice cream maker is on my shopping list! :)

  15. Ana

  16. domestic diva

  17. kari

That ice cream sounds fabulous. The book sounds interesting too. Thanks!

  18. Hannah

I’d love to win the book! Baby #2 is on the way and I need another babyfood making book!
Thanks for all the great recipes! I am making the food for a friend’s Blessingway and most of what I am making is coming either from your book or this website!

  19. Yum! This looks great!! I wonder if I could sub the coconut milk for almond milk. I’m intolerant to coconut. :( Would I need to add something to make it smoother then too…like banana?

  20. Tanya

I am making this tomorrow! I also have been craving all things pumpkin.

  21. Julia

This looks YUMMY! I know my daughter will want to make it this weekend.

  22. Christie

I’m glad you’re obsessed with pumpkin things, because I am too and now I have some great recipes to try! I’m going to try the pie soon and I’m SOOOO excited!!! I also have a 2-year-old and am expecting a new baby, so I’d love the book.

  23. Melissa

This looks so good, finally a recipe for ice cream that is egg, dairy, and soy free. I’m so excited! I love pumpkin too.

  24. Heather

Oh, this looks yummy :) Loved the pumpkin bars! Thanks for all the great ideas for using fresh garden pumpkin! We’re expecting our fourth baby & I’d really like to do much of the baby food making myself this round, so the book sounds awesome, too!

  25. Barbara

The ice cream looks interesting. I’ll have to try it. I’ll put it on the schedule of your recipes to make.

  26. Sabrina

So excited to try this, it sounds fantastic. Need to find an ice cream machine, though!

  27. I just made (non-vegan) pumpkin ice cream and it was amazing! May I suggest adding candied walnuts (they’re easy to make)?

  28. Jessica

This just may be the recipe that finally causes me to break down and buy an ice cream maker! I’m so excited to try it – yum!

  29. Hallie @ Daily Bites @ hallieklecker.com

  33. Amanda

I am a mother to a little girl, and I am always trying to read anything about children and health. I would love to win that book. Hope everyone has a safe and Happy Halloween!!

  34. This looks so go. Whenever I attempt “ice cream” it’s too icy and freezes solid, so I only get one creamy serving on the first day. I will have to try this one.

  35. Ardith

This ice cream looks delicious! Also, I have just begun the process of starting a family and would love to have the book!

  36. I love that you used raw cashews and coconut milk. I haven’t yet used cashews for a vegan ice cream, but I’ve made cashew milk and cashew cream, so I had an inkling it’d work. This looks delightful.

  37. Kathleen

Oh, wow. I love coconut-milk ice creams. And cashews and pumpkin are two of my favorite things ever!

  38. Andrea

This looks so amazing! I love all things pumpkin around this time of year and I have two beautiful squash that I could roast to make this. YUM!

  39. Cindy

Well its time to find a ice cream maker, My son and I have a hankering for some pumpkin ice cream YUM thank you so much…Cindy from Western Kansas…

  40. Bett

    Looks amazing!

I am wondering how many servings this is, of what size scoop. It helps the decision (make it? don’t make it?) and if that answer is yes, the planning process, to know.

    :-)

    Thanks,

    Bett

  41. Yummy!!!!!!! I can’t wait to try this recipe, albeit without an ice-cream maker ;)

  42. This is a great treat for Halloween party.

    Elana,
I just want to thank you again for all your yummy recipes. I look forward to every new recipe you post. As a fellow Celiac, I don’t know what I would do without my favorite cookbook: The Gluten-Free Almond Flour cookbook that you produced. I always make baked goods from there and bring them to any celiac or gluten free events I go to and then people rave. Of course I give them the recipe and tell them to purchase your book! I can’t wait for your next cookbook, I’ll be the first in line.
Thanks again for sharing all your wonderful recipes, it is greatly appreciated!

I’m writing this as I’m enjoying my peach blueberry crumble and a cup of tea! Yummy!

    Happy Halloween!

  54. Alison

    Hello!

I live off of the recipes on your website since my son and I are both gluten sensitive…and I would love to have a copy of Feeding Baby Green! I’m expecting my third baby (another boy!) in May and would love to have this book as a resource.

  62. Amy @ Simply Sugar & Gluten Free @ simplysugarandglutenfree.com

Hi Elana! I checked out your recipe a few days ago but haven’t looked at my own comments…when I finally looked at them today I noticed that I you linked to my pumpkin ice cream sandwiches. Thanks so much for sharing my recipe with your readers! :)

I know you can’t eat cornmeal but the pumpkin and cornmeal cookie combo is delicious. I like your version with cashews and coconut milk – that has to create a luscious smoothness.

  63. Lisa Vance

This looks delish! It’s on my list for Thanksgiving deserts.. I’m terrible with gluten-free baked goods, so this is pumpkin without baking, SWEET!

  64. Kim

When I lived in Italy this summer I promised myself I’d buy an ice cream maker so I could recreate gelato at home. Here is another recipe to inspire me to buy one! :) Thank you!

  65. Linda

OK. So this recipe made me high tail it to McGuckins and buy an ice-cream maker today. Not sure it will even make it into the ice-cream maker because I can’t stop eating it by the spoonful!!!

  66. Marie

It’s the time of year for all things pumpkin! Thank you for yet another delicious GF recipe! :-)

  67. Miyuki

  79. Hi Elana,
My family and I have been gluten and dairy free for over 6 years now, since the birth of our first son. Your website has been so helpful especially when mainstream resources were not always available/reliable. Plus, I prefer to do more from scratch, so I love the recipes! I have a substitute question. We cannot eat cashews, Brazil nuts or pistachios. Wat could we use in this recipe in place of the cashews?
    Thanks again! ~Stephanie

  80. Natalie M.
