Greeña Colada
Even though summer is coming to a close, I'm still into my green juices and smoothies; more than ever, in fact. This is one of my favorites and I owe credit to Meghan Telpner as it is based on one of the recipes from the Green Cleanse on her site.
I'm running out to the airport with one of these in hand to refresh and revive me on the dash to Denver. Soon I'll be in NYC doing signings and I hope to see some of you there, while I'm in my green smoothie withdrawal.
1 large cucumber, peeled and chopped
¼ cup water
½ cup parsley
½ cup frozen pineapple chunks
1 tablespoon coconut oil
5 drops stevia
4 ice cubes
- Place cucumber and water in a Vita-Mix
(or other high speed blender) and process on high until liquid
- Add parsley, pineapple, coconut oil, stevia and ice and blend until smooth
- Serve
This refreshing green smoothie is a great post workout drink. It is hydrating, full of good greenness and a nice little dose of fat. I like to think of it as a green Piña Colada, or a "Greeña Colada." I feel so healthy drinking it!

Hi Elana,
Good luck with all your upcoming events!
When you make this drink in the vita mix, are you just blending it? Or do you use another setting that I wouldn't have on my regular blender?
Thanks, Penny
I love green drinks! This one sounds really refreshing though I can't handle coconut oil unless it is cooked. I'm sure it would be just as tasty without it, though.
Oh my goodness!! This looks so yummy! What a great idea. :-)
Juiced cucumbers are one of the most refreshing drinks - I don't have a vita-mix so I use my juicer and it works beautifully.
I know all will go well in NYC!! Have a great time.
Such a refreshing "end of summer" beverage!!
Safe travels, dear Elana!!
Yum, this sounds so refreshing!
One of my faves too! So happy you like it. I am currently in Winnipeg (a small city in the Praries of Canada visiting some family and I took my grandma for lunch. I ordered a green smoothie from the veggie place. She tried it and told me it tasted like grass. I told her that was why I loved it. She shook her head at me and said what she always says "What will I do with you..."
Thanks for this drink recipe Elana. I got a VitaMix thanks to your recommendation (and my sister's) and have been looking for these kinds of drinks to make.
Best wishes on your book interviews...I LOVE the cookbook and bought several copies for friends.
Good luck in NYC! Any chance you'll be coming down to the DC area for book signings? Can't wait to try your greens drink.
What a lovely picture! Yum!
I love green smoothies and green juices. They make the cells of my body sing and dance! :)))
Cheers,
Kristen
Sounds delicious! Can't wait to get a vitamix!
Wow, I won. Hello healthy bowels!
I could do that! That DOES sound refreshing. :-)
This was JUST the ticket after my spin class kicked my butt. Thank you, again!
If I wasn't allergic to pineapple, I'd have loved this. Oh well
This looks like yet another green recipe that I want to try. I love my cucumbers and I love a colada. ;-)
Have a wonderful time in NYC!

Hi there,
I am actually posting a comment about Carrot Cake and Coconut Frosting - for some reason I can't actually post a comment on the relevant pages :( I tried the Carrot Cake recipe, but as I am not a celiac - just trying to reduce my gluten and simple carbohydrate consumption - I used wholemeal spelt flour. Unfortunately it didn't turn out so well and did not cook through. Next time I will try almond meal as I cannot find anyone that stocks blanched almond flour where I live.
Regarding the coconut frosting, I followed that recipe to a T and it obviously wasn't my night for baking because the frosting never set and had little lumps of agave nectar through it... Disaster all round!! ;) Anyway, I'll have another go and let you know the results. Thanks for the great recipe ideas though :)
